Will they work with any lens? Extension tubes will work with any lens with some exceptions. I can't put an older extension tube on my 16-35mm or my 24-105mm. The newer extension tubes by Canon will work, though.
What lens will I use an extension tube on? You're usually going to put an extension tube on a 75-300mm lens or a fixed lens like a 105mm or a 300mm. An extension tube is used when you want to get closer to a subject. (The photo at left of the gray hairstreak was taken with a 12mm extension tube on a 300mm f/4 lens. The butterfly is very small so the extension tube allows me to get closer so the butterfly is larger in the frame. Eliminates the need to crop later on.)

The Canon 70-300mm lens focuses to 3.9 feet. Put a Canon extension tube EF 12 II on that lens and you reduce the focusing distance. The EF 25 II is recommended for lens 50mm and up but you can use it with an 18-55mm lens in parts of the zoom. The Nikon PK-12 and PK-13 are recommended for lenses 50mm or higher.
The photo of the speckled tanager at left was taken with a EF 12 extension tube and a 500mm lens. We were too close to the birds to focus the 500mm lens. (What a treat!!) The extension tube allowed me to stay close and hence the bird was larger in the frame.
I recommend you buy a tube and play with it. The investment is not huge but you're going to benefit from the gadget once you learn how to use it.
